About Us

With roots in Boston, CEO Jack Wilkins set out to master and perfect Southern-style barbecue with hopes of bringing the flavor back home. His journey began by buying a one-way plane ticket to Texas, where he became an apprentice at a very small local BBQ shop that needed extra help. Jack was thrown right into the thick of it. This was the perfect opportunity for Jack as he was able to learn step by step the in’s and out’s of prepping, marinating, cooking, and carving a variety of different cuts of meat, all of which allowed Jack to master the original Deep South BBQ. Wanting to learn more of the older styles of BBQ, Jack headed to Tennesee. It was during his time here, that Jack learned to cook brisket that would melt in your mouth. Around 2003, Jack moved on to Kentucky. At this point in his journey, Jack had begun to make a name for himself. Jack made an arrangement with a famous sausage maker offering to teach him how to cook brisket in exchange for learning how to make Kentucky sausages, and after a few weeks adding having another skill under his belt. Finally, feeling that his understanding of the perfect Southern-style BBQ was complete, Jack looked into setting out on his own along with trying to figure out how to get back home to Boston! One day after work, Jack saw a truck that was for sale. Immediately light bulbs went off and Jack new that this truck was the missing piece he had been looking for. On June 1st, 2012, that is exactly what he did!
